Food Truck Monday set to return in April

AMBOYThe spring and summer sensation known as Food Truck Monday is returning to the Amboy Depot Museum parking lot from April through October.

After a test run event three years ago and a full 2024 schedule, organizer Kirstyn Carter didn’t see any reason to not bring the different food options back to Amboy.

“It makes me happy to see everyone visit and enjoy some good food,” Carter said. “I didn’t think it was going to work. I actually thought it was going to flop and no one was going to enjoy it.

“Through the warmer months, the crowd grows. We’re all busy but people enjoy having different food options they normally wouldn’t have, so they come out.”

So far, Carter has 13 different trucks scheduled throughout the seven-month schedule.

Taco Guzman, Philly Factory, The Press Box, The Bluesy Box (affiliated with The Press Box offering different food items), and Main Squeeze will be accounted for during each of the dates.

The selected Mondays are April 28, May 12, June 16, July 14, August 4, September 15, and October 13.

Also available during the Food Truck Monday schedule is JYD’s, T D BBQ, Naiho’s Eggrolls & More, Cousins Main Lobster, Flo’s on Pulasky, Bumble Bites, Little O’s Frozen Treats, and Kona Ice.

With the help of vender fees and all donations by patrons, funds are donated to different organizations and charities in Amboy.

To date, Carter and Food Truck Monday has donated a total of $2,063 to Clipper Kiddies, Amboy Lions Club, Amboy Police Department, Amboy Fire Department, a can food drive, Teen Turf, Amboy High School, Amboy Park District, and Lee County Shop with a Sheriff.

Carter hopes to bring in larger donations this time around.
